This is a dip that even the not so veggie-liking people will love. Its cheesy. Its hot. Its delicious! It has some of the not-so-favourite ingredients in it, made this way, anyone will eat. So… just try to eat one bite of this dip… I dare you!

Hot {Broccoli} Dip
Yield: 15 servings | prep time: 10 minutes
1-1/2 cups fresh broccoli, chopped (about 6 oz)
2 Tbsps. onion, chopped small
2 Tbsps. red bell, chopped small
1/4 cup Parmesan cheese, grated
1 garlic clove, pressed
1 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup mayonnaise
1/8 tsp ground black pepper
Heat oven to 375 degrees. Place broccoli, onion, and bell pepper in a small bowl. Grate Parmesan cheese over it and add 2 tablespoons to vegetable mixture. Press garlic and add to vegetables; set aside. Mix cheese, sour cream, mayonnaise and pepper. Spoon into a glass baking pan, and bake 20-25 minutes or until the broccoli is a somewhat soft. Sprinkle remaining 2 tablespoons Parmesan cheese over top and serve with organic pita chips or organic blue corn tortilla chips.

This recipe is actually from one of the Pampered Chef cookbooks Mom has. She and a friend of ours used to do scrapbooking events and our friend would always bring a pan of this. I loved it, even though I was not a big pepper or onion fan. The red pepper gives this dip a bit of a sweet taste, but it correlates great with onion and garlic.

It’s great for a cold day if you’re wanting something hot and a little different than soup, but that’s not too hard to put together. Throwing everything together in a bowl and then putting it in the oven is one of the beauties of this dish. Quick and easy… and delicious!











Mmmm… I love Hot Broccoli Dip! I made it just last week for lunch. Everyone really enjoyed it! The only thing I did a little different was leaving out the Bell Pepper (didn’t have any) and chopping the Broccoli really fine. It was super yummy!
