
The Seven Sisters posted a delicious recipe for these homemade crackers, and I just had to try them. They taste just like the store0-bought ones, only better. You will not want to go back to buying store-bought ones once you make these!
{Homemade} Wheat Thins
Yield: about 50 crackers.
1 1/2 cups pastry flour
1/2 cup whole wheat flour
1/4 cup sugar
1/4 tsp. salt
2 tbsps. butter, softened
1/3-1/2 cup milk
salt for the topsPreheat the oven to 325°F. In your mixer bowl, combine the flours, sugar, and salt, mix well. Cut the butter into the flour with a pastry cutter until the mixture resembles a course meal. Blend in the milk slowly, using only enough to form a dough that will hold together in a ball.
Divide the dough onto two well-greased baking sheets and roll out very thin. Cut the dough into cracker-size pieces and sprinkle them with salt. Bake for 20 to 25 minutes, or until lightly browned. Cool and break up. Store in a sealed container.

I tweaked the recipe a little, and put less sugar in. The original recipe calls for 1/2 cup of sugar, and I put half of that in the second time. It made them less sweet. But if you like sweeter crackers, go ahead and make them with 1/2 cup of sugar. I was also thinking of putting some garlic and Italian spices powder in the dough before rolling it to give them a nice flavour. But they are delicious anyways!
