This morning, after chores, I was going to make an apple pie. But seeing the apples were gone, I decided to make some tortillas. I love homemade tortillas and these are very easy to make. They are much healthier for you than buying store-bought.
The ones in the photos were made with whole wheat, and they are kind of hard and not very good for folding. I usually use all purpose to make them now which makes them fold better and they are still soft. But you can use a combination of both for a healthier version instead of just the all-purpose!
Homemade Tortillas
PREHEAT: none | COOK: 45 minutes | Yields: 12-15
3 cups of flour
1 tsp. salt
1/4 cup + 1 tbsp. organic palm shortening*
1-1/4 cups warm water

Mix flour and salt in a large mixing bowl. Then add the shortening and cut with a pastry cutter until its a fine crumb. Add warm water and mix with a wooden spoon until it is easy to handle. Flour your working surface with flour and knead a little. Then divide dough into 12 balls. (You can make them a little smaller and get 15 balls.) Take a dough ball and pat into a circle, then roll out the dough into the best circle you can. Cook in heated iron skillet for 30 seconds on each side, then put in a pan and stick in the oven on 170. (This will keep your tortillas warm and easier to fold.) Do the same thing with all the rest of the dough.
*I found that using coconut oil instead of regular oil or even palm shortening is the best thing. It makes them easier to fold and makes better tasting tortillas. I use the expeller pressed coconut oil from Tropical Traditions, which doesn’t have that big of a coconut taste to it.
Once you get the hang of making tortillas, you will know the recipe by heart and make them any day.

I have always bought tortillas at the store until recently. One night we all wanted burritos and I didn’t have any tortillas, so I went to the internet and found a recipe! My recipe is similar to yours, only I add 1-1/2 tsp. of baking powder. It’s supposed to make them lighter.
I never thought about putting them in the oven after cooking them. Won’t they dry out in there? I have just been covering mine with a tea towel, then put them in a ziplock bag with a damp paper towel and put them in the microwave for a minute and it softens them right up! :)
They are easy to make! I roll them out til they’re paper thin and the dough holds together nicely. It’s amazing! I wish my pie dough held up as well!
