Coconut Lime Rice Pilaf…

This is one of my favourite rice dishes. It is flavourful, zesty and very delicious! It’s become a family favourite, even with all the onions and celery ribs. You’ll want to bookmark my page after you try this once, because you’ll want to have it again for dinner. It also uses Virgin Coconut Oil from Tropical Traditions. Love that stuff!

Coconut Lime Rice Pilaf…
4 tbsps. virgin coconut oil
1-1/2 cups chopped onion (about 1 large)
3 cloves garlic, crushed
1/3 cup celery, finely chopped {about 3/4 big rib, or a small rib}
3 cups uncooked brown rice
6 cups water
1-1/2 tbsps. finely shredded lime peel
1-1/2 tsps. sea salt
1 tsp. ground black pepper
1/2 tsp. paprika

Melt butter in dutch oven and add in onions and garlic; cook until onions are tender. Pour in the rice, water, lime peel and spices. Cook until the rice is tender, about 45 minutes. Serve topped with grated lime peel and ground black pepper on top.

You can also use lemon for this recipe, as both are good. But since I didn’t have any, I used lime. I prefer lime over lemon anyhow. But you can use lemon or lime to flavour this delightful dish. Its a great dish with fish! Rice and fish are like peas and carrots – they just go together. Fish is one of my favourite meats, but that’s probably because we don’t have it often. :)

    I have been making a lot more things and taking photos of them. I figured I should post and share the recipes with every one so they could try it too. I don’t like posting the recipe without a photo, because I hate not being able to see what the end product should be of what I am going to make. So I try to make sure I take a photo. :)

    Glad you liked it Sarah. :) Let me know when you make it and how you like it. You could probably put some coconut oil in there. I found that when I used coconut oil in the rice, it make it nice and fluffy and the rice didn’t stick together. It was quite good. I love adding lemon or lime to my rice and so the coconut flavour made it even better with that.

    LOL. I sometimes put some butter on top of the rice before I serve it, and put the lime rind on it.
